Why do some people consider a wildly improbable answer to be more right than 'I don't know'?

It cannot be proved scientifically how the universe began (whether God was involved or not), because science only concerns things that can be directly tested. However, from what we know, matter cannot be created nor destroyed. Therefore, theists conclude that a force outside of time and matter was needed to create time and matter.
