What causes a sore after bitting my lip?

Trauma to your lip anywhere lower or upper causes a sore. There is a high blood supply to your lip at all times just like your mouth and therefore is very fast at healing. Apply cream such as Aciclovir or Savlon and this will scab over and heal.
